Sometimes a customer's info changes for whatever reason (eg email address), so it would be good to be able to change it without having to go through the whole 'amend reservation' process. Just open the reservation and change it there - it would mean having inline edit on these fields, but you have them on other fields already so I can't see any obstacles...
