The legislation on personal data makes it possible to register a customer who reserves by phone or by mail or by email! Why not put a checkbox that would register the BO client from the direct telephone reservation?

The GDPR law makes it clear that an informed agreement is required; if you ask people for permission to create an account on the site so as not to have to enter new contact details and receive newsletters and that he can, if he wishes, unsubscribe from newsletters or revoke his consent, and delete his account, then YES the law allows it.
