Where do I change the text and fields in the confirmation emails sent to the customer?

Hi,

You can change them here:

/components/com_solidres/layouts/emails/reservation_complete_customer_html_inliner.php
/components/com_solidres/layouts/emails/reservation_complete_owner_html_inliner.php

For the guest's fields, if you install Custom Fields plugin, you can manage it from Solidres Custom Field menu.
